Memo to me:

I really must learn not to procrastinate when it comes to baking. Today is the party for Ronnie's grandmother's 80th birthday. I volunteered to bake the cake, and we realized that there were going to be a lot of people there. Enough that one carrot cake wasn't going to be enough.

So I made cupcakes too, and cream cheese frosting for both.

I knocked them all out (as well as having to wash all the bowls 3 times over) in under 2 1/2 hours. But BOY, do I wish I'd at least baked last night so that all I had to do was the frosting this morning.
